Pumpkin Spice Banana Bread


No better way to welcome fall than a warm slice of Pumpkin Spice Banana Bread!


  • 4 large eggs
  • 2 medium bananas, ripe
  • 1 15 oz. can pure pumpkin
  • 1/3 c. unsalted butter, softened
  • 1/3 c. canola oil
  • 1/2 tsp. vanilla
  • 3/4 c. of sugar
  • 3 1/2 c. of flour
  • 2 tsp. baking powder
  • 1/2 tsp baking soda
  • 3 tsp pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 10 oz. bag of mini chocolate chips

Preheat oven to 350°F and using Bak-Klene ZT Nonstick Baking Spray, grease 2 8.5x4.5 standard loaf pans and set it aside.

Using a mixer fitted with a paddle blade, blend the following ingredients until mostly smooth; eggs, bananas, pumpkin, butter, oil, and vanilla.  (It's okay if there are a few lumps of butter).

In a large bowl, whisk together the following ingredients; flour, baking powder, baking soda, pumpkin pie spice, and salt.  Add your dry ingredients to the mixer and blend until fully combined.  Fold in the chocolate chips.

Divide the batter between two loaf pans and bake for 45-60 minutes, until a toothpick inserted into the center of the bread comes out clean.  Cool for 15 minutes in the pan before transferring to a cooling rack.  Enjoy with a glass of milk!

NOTE:  If the top of the bread begins to brown and the center is not done, cover with foil and continue to cook, checking the bread for doneness every 7 minutes.
